About the Coffee

This natural process Ethiopian coffee from Guji is bright, floral, and beautifully expressive. With notes of apricot, honeysuckle, lavender, and citrus, it’s a vibrant cup that feels both delicate and complex. The light body and lively acidity give it a crisp, tea-like finish, making it perfect for pour-over and other clean brewing methods.

Origin Report

This coffee comes from the Danbi Udo Wet Mill in Ethiopia’s Guji Zone, where high elevations (1,950–2,200 meters) and rich volcanic soil create ideal growing conditions. The region is known for producing coffees with clarity, sweetness, and layered floral character.

Farmers handpick ripe cherries, which are carefully sorted and dried on raised beds using the natural process. This slow drying method enhances fruit and floral notes while building depth and complexity. The coffee is grown by smallholder farmers using a mix of traditional landrace varieties and selected cultivars, contributing to its unique and nuanced profile.

Danbi Udo works closely with local producers to maintain quality and consistency, continuing Ethiopia’s long-standing tradition as the birthplace of coffee—where careful cultivation and processing bring out some of the most distinctive flavors in the world.
